Easy kimchi pancake recipe by Chef John - customizable with leftovers, top with bonito flakes for umami.
Ingredients:
  • 1 (12 ounce) jar kimchi
  • 1 large egg
  • 0.25 cup water
  • 1 teaspoon brown sugar
  • 0.5 teaspoon sesame oil
  • 0.5 cup thinly sliced green onions
  • 0.75 cup all-purpose flour, or as needed
  • 1 tablespoon vegetable oil
  • 4 tablespoons bonito flakes
Instructions:
  • Thoroughly drain kimchi in a sieve, saving juice. Finely chop kimchi and set aside.
  • In a large bowl, combine egg, water, 3 tablespoons of reserved kimchi juice, brown sugar, salt, and sesame oil. Add kimchi and green onions, then gently fold in flour until mixed.
  • In a skillet over medium-high heat, swirl vegetable oil. Spoon some batter onto the skillet. Cook until edges are lightly browned, about 3 minutes. Flip and crisp up for 2-3 minutes. Transfer pancake to a plate and repeat with remaining batter.
  • Garnish the pancakes with a generous sprinkle of bonito flakes before serving.
