Delicious and fiery Korean kimchi pancakes with tangy dipping sauce, perfect for reviving old kimchi.
Ingredients:
  • 1 cup kimchi, drained and chopped
  • 0.5 cup reserved juice from kimchi
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 green onion, chopped
  • salt to taste
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 0.5 teaspoon sesame oil
  • 0.5 teaspoon Korean chili pepper flakes
  • 0.5 teaspoon toasted sesame seeds
Instructions:
  • Combine the kimchi, kimchi juice, flour, eggs, and green onion in a bowl and mix well.
  • In a large skillet over medium heat, add vegetable oil. Pour about 1/4 cup of batter for each pancake into the skillet, spreading it thinly. Cook pancakes until set and lightly browned on both sides, about 3 to 5 minutes per side. Season with salt to taste.
  • Combine rice vinegar, soy sauce, sesame oil, chili flakes, and toasted sesame seeds in a bowl for a flavorful dressing to serve with the pancakes.
