Quick pickled cabbage and carrots dressed in sesame, vinegar, cayenne, and sugar for instant kimchi flavor.
Ingredients:
  • 1 small head cabbage, shredded
  • 0.25 cup rock salt
  • 1 small carrot, cut into thin strips
  • 3 tablespoons vinegar
  • 2 tablespoons vegetable oil
  • 1 tablespoon white sugar, or to taste
  • 1 teaspoon sesame oil
  • 1 teaspoon toasted sesame seeds, ground
  • 0.5 teaspoon cayenne pepper, or to taste
Instructions:
  • Toss cabbage with rock salt in a bowl. Allow to sit for 15 minutes, stirring occasionally. Rinse gently and drain well.
  • Combine cabbage, carrot, vinegar, vegetable oil, sugar, sesame oil, sesame seeds, cayenne pepper, and salt in a bowl. Chill in the refrigerator for at least 30 minutes before serving.
