Elevate your beef burger with crisp carrots, cabbage, pickled jalapenos, and zesty tonkatsu sauce for a delicious twist!
Ingredients:
  • 125.00 ml rice vinegar
  • 112.50 gm sugar
  • 2 jalapeno chillies, cut into 2mm-thick slices
  • 4cm-piece fresh ginger, peeled, cut crossways into 1mm thick slices
  • 171.60 gm tomato sauce
  • 42.00 gm fresh lemon juice
  • 48.80 gm Worcestershire sauce
  • 10.60 gm soy sauce
  • 500g 4 Star Beef Mince
  • 1/2 head mini drumhead cabbage (about 180-200g), dark outer leaves removed, very thinly sliced
  • 1 small carrot, peeled, cut into thin matchstick-size strips
  • 1 spring onion, thinly sliced diagonally
  • 18.40 gm canola oil
  • 4 seeded bread rolls, split, toasted
  • 61.88 gm mayonnaise
Instructions:
  • In a small saucepan, simmer vinegar, sugar, water, and salt until syrupy. Remove from heat and stir in chili and ginger. Let cool for 20-30 minutes.
  • In a small bowl, mix together tomato sauce, lemon juice, Worcestershire sauce, soy sauce, and season with salt to make the tonkatsu sauce.
  • Combine beef with 2 tablespoons of tonkatsu sauce in a bowl; form 4 patties. Mix cabbage, carrot, and spring onion in another bowl.
  • Heat a large heavy frying pan over medium-high heat, then add oil followed by the patties. Sear each side for 3-4 minutes until deeply caramelized and cooked to medium-rare. Remove the patties from the pan and promptly spread 1 tablespoon of tonkatsu sauce over each.
  • 1. Spread a generous layer of mayonnaise over the roll bases. 2. Pile on half of the cabbage mixture, followed by the patties. 3. Add about 6 pieces of pickled chilli and ginger on each patty, then top with more cabbage mixture. 4. Drizzle more tonkatsu sauce over the roll tops and place them on the burgers. 5. Serve immediately for the best flavor.
