Healthy, low-fat burgers that everyone will love.
Ingredients:
  • 1.2kg sebago potatoes, peeled
  • olive oil cooking spray
  • 400g extra lean beef mince
  • 1 brown onion, finely grated
  • 1 tomato, quartered, deseeded, finely chopped
  • 125.00 ml wholemeal fresh breadcrumbs
  • 62.50 ml flat-leaf parsley leaves, finely chopped
  • 1 egg, lightly beaten
  • 4 wholegrain bread rolls, split, toasted
  • 250g cherry tomatoes, halved
  • 1 Lebanese cucumber, halved lengthways, sliced
  • 80g mixed salad leaves
  • 2 celery sticks, thinly sliced diagonally
  • 20.00 ml balsamic vinegar
  • 1/2 lemon, juiced
Instructions:
  • Preheat your oven to 200°C. Line 2 baking trays with baking paper. Cut potatoes into wedges and arrange them in a single layer on the trays. Spray with oil. Roast for 40-45 minutes, turning halfway through, until the potatoes are golden and tender.
  • In a large bowl, combine mince, onion, tomato, breadcrumbs, parsley, egg, salt, and pepper. Mix thoroughly with your hands until everything is well combined. Divide the mixture into 8 portions and shape them into 2cm-thick patties.
  • Prepare a generously oiled large, non-stick frying pan over medium heat. Cook beef patties in batches, allowing 4 minutes on each side or until fully cooked.
  • Prepare the salad by mixing tomato, cucumber, salad leaves, and celery in a bowl. In a separate bowl, whisk together vinegar, 1 tablespoon lemon juice, salt, and pepper. Drizzle the dressing over the salad and toss to ensure everything is coated evenly.
  • Assemble each roll with salad, 2 patties, and the top bun. Enjoy with a side of wedges.
