Budget-friendly lamb pasties, perfect for kids, picnics, and parties - sure to be a crowd pleaser!
Ingredients:
  • 410g plain flour
  • 90g chilled unsalted butter, chopped
  • 90g lard, chopped
  • 18.40 gm vegetable oil
  • 1 onion, finely diced
  • 350g minced lamb
  • 22.20 gm tomato paste
  • 48.80 gm Worcestershire sauce
  • 20.00 ml chopped fresh thyme
  • 300ml beef stock
  • 1 small potato (such as desiree), peeled, diced
  • 1/2 carrot, peeled, diced
  • 62.50 ml frozen peas, defrosted
  • 1 egg, lightly beaten
  • Tomato sauce, to serve
Instructions:
  • In a food processor, combine flour and a pinch of salt. Add butter and lard, pulsing until mixed. Pour in 1/3 cup (80ml) iced water and process until a smooth ball forms. Wrap in plastic wrap and chill in the fridge for 30 minutes.
  • Heat oil in a frypan, sauté onion over medium heat for 2 minutes. Brown lamb, then add paste, sauce, thyme, stock, potato, and carrot. Cook for 10 minutes. Season with salt and pepper, add peas, and cook for another minute. Let it cool before serving.
  • Preheat the oven to 180°C. Roll out pastry on a lightly floured board to 3mm thick. Cut out 10cm circles from the pastry using a small saucer as a guide. Brush the edges with water. Spoon 2 teaspoons of filling onto each circle, fold over, and seal edges by pressing and crimping with your fingers. Place on an oiled baking sheet, brush with egg, and bake for 30 minutes or until golden. Serve with tomato sauce. Pasties can be frozen before baking.
