Make quick and tasty sweet potato pies for a nutritious weeknight meal.
Ingredients:
  • 500g orange sweet potato, peeled, diced
  • 9.20 gm olive oil
  • 1 small brown onion, finely chopped
  • 1 small carrot, peeled, finely chopped
  • 1 small zucchini, finely chopped
  • 400g lean beef mince
  • 400g can diced tomatoes
  • Mixed salad leaves, to serve
Instructions:
  • Preheat oven to 200°C/ 180°C fan-forced. Boil potatoes until tender, then drain. Mash potatoes in a bowl and season with salt and pepper. Keep warm by covering until serving.
  • In a large saucepan over medium heat, heat oil until shimmering. Sauté onion, carrot, and zucchini until softened, about 5 to 6 minutes. Add mince and cook, breaking it up with a wooden spoon, until browned, about 3 to 4 minutes.
  • Add juicy, ripe tomato to the mixture and gently stir to combine. Lower the heat to a gentle simmer over medium-low. Let it cook for 5 to 10 minutes until the sauce thickens to perfection. Spoon the delicious mixture into four 1-cup ovenproof dishes and crown each with luscious slices of potato.
  • Arrange the dishes on a baking tray and bake for about 15 minutes until they are beautifully golden and heated through. Serve alongside fresh salad leaves.
