Kid-friendly rolls that are a hit with little chefs.
Ingredients:
  • 400g chicken thigh fillets, trimmed of fat
  • 18.40 gm vegetable oil
  • 21.00 gm soy sauce
  • 42.00 gm fresh lemon juice or lime juice
  • 30 whole green beans, topped, tailed
  • 12 sheets filo pastry
  • 18.20 gm olive oil
Instructions:
  • In a frying pan, combine chicken thigh filets, vegetable oil, soy sauce, brown sugar, and lemon or lime juice. Cook covered over low heat for 12 minutes until chicken is cooked through, turning once. Let it cool, then chop the chicken into small pieces and mix with the pan juices. Cut 6 beans in half lengthwise.
  • Preheat oven to 180°C and line a baking tray with non-stick baking paper. Keep filo sheets covered with a tea towel to prevent drying out. Brush edges of a folded filo sheet with water, add chicken mixture, beans, and roll up. Place seam-side down on tray, brush with olive oil. Repeat to make 12 rolls. Bake in oven for 20 minutes until golden. Let cool for 5-10 minutes before serving warm. Enjoy whole or cut into halves.
