Ingredients:
  • 2 cloves of garlic
  • 1 bunch of flat-leaf parsley (30g)
  • 30 g soft unsalted butter
  • 4 x 150 g free-range skinless chicken breasts
  • 4 sheets of filo pastry
  • red wine vinegar
  • 800 g potatoes
  • 400 g frozen peas
  • 200 g purple sprouting broccoli
  • extra virgin olive oil
Instructions:
  • 1. Preheat the oven to 200°C/400°F/gas 6. 2. Grate the garlic, chop the parsley, and mix with butter, salt, and pepper. 3. Slice a pocket into each chicken breast and stuff with garlic butter. Seal. 4. Wrap each breast in filo pastry and place on an oiled tray. 5. Brush with olive oil and red wine vinegar mixture. 6. Roast in the oven for 25 minutes until golden and cooked through. 7. Boil potatoes and peas until tender. 8. Toss broccoli with oil and vinegar, add to the tray for the last 10 minutes. 9. Mash potatoes and peas with olive oil and season. 10. Serve everything together.
