Recreate the iconic Little Debbie Oatmeal Creme Pies with a chewy and irresistible homemade version in under 30 minutes.
Ingredients:
  • OATMEAL COOKIES
  • 1 cup (8 oz.) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed dark brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups (about 8 1/2 oz.) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon table salt
  • 3 cups uncooked quick-cooking oats
  • CRÈME FILLING
  • ½ cup (4 oz.) unsalted butter, softened
  • ¼ cup vegetable shortening
  • 1 ½ cups powdered sugar
  • 1 (7-oz.) jar marshmallow crème
Instructions:
  • To make Oatmeal Cookies: Preheat oven to 375°F. Using an electric mixer on medium speed, combine butter and sugars until smooth. Add eggs one at a time, then mix in vanilla. In a separate bowl, combine flour, baking soda, and salt, then slowly add to the butter mixture. Mix in oats until fully combined.
  • Form the dough into walnut-sized balls and arrange them on parchment paper lined baking sheets. Bake in a preheated oven until golden brown, for 8 to 9 minutes. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  • For the Crème Filling: Cream together the butter and shortening on medium-high speed until light and fluffy, approximately 3 minutes. Gradually mix in the powdered sugar on low speed until combined. Stir in the marshmallow crème until smooth.
  • Add a generous dollop of crème onto half of the cookies, then sandwich with the remaining half of cookies.
