Our flavorful Spanish rice dish featuring juicy prawns is a perfect Friday night celebration!
Ingredients:
  • 1 brown onion, coarsely chopped
  • 5.00 gm paprika
  • 1/4 tsp turmeric
  • 2 tomatoes, coarsely chopped
  • 1 red capsicum, halved, deseeded, coarsely chopped
  • 300g (1 1/2 cups) white long-grain rice
  • 2 vegetable stock cubes
  • 1L (4 cups) boiling water
  • 750g medium green prawns, peeled leaving tails intact
  • 20.00 ml chopped fresh continental parsley
  • Lemon wedges, to serve
Instructions:
  • In a heated paella pan or large frying pan, simmer the oil over medium-high heat. Incorporate the onion and garlic, stirring for 3 minutes until the onion softens. Add the paprika and turmeric, stir for 1 minute until fragrant. Mix in the tomato and capsicum.
  • Add the rice to the pan and cook, stirring, for 1 minute. Combine the stock cubes and water in a heatproof jug, then add to the pan. Cook for 15 minutes, stirring occasionally.
  • Lay the prawns on the rice, cover, and cook for 5 minutes until the rice is tender and the prawns turn pink and curl. Top with parsley and serve with lemon wedges.
