Prawn & pumpkin paella

Vibrant vegetable paella, a family favorite.
Ingredients:
  • 27.30 gm olive oil
  • 20 green banana prawns, peeled
  • 440g rice
  • 400g can diced tomatoes
  • 5.00 gm smoked paprika
  • 1/2 tsp saffron strands
  • 1020.00 gm (1 litre) chicken style liquid stock
  • 700g butternut pumpkin, peeled, seeded, cut into 2cm pieces
  • Salt & freshly ground pepper
  • 230g pea
  • Roughly chopped parsley
Instructions:
  • In a large deep frying pan over medium-high heat, sizzle prawns in olive oil for 2 minutes until perfectly cooked. Set them aside and cover with foil to keep them warm.
  • Sauté the onion and garlic until soft, then mix in the rice, tomatoes, paprika, saffron, stock, and pumpkin. Season with salt and bring to a simmer. Let it simmer on medium-low heat for 25 minutes without stirring.
  • Add 1 cup (250ml) water and let it simmer for 10 minutes until the rice and pumpkin are tender, stirring occasionally to prevent sticking. Mix in peas and prawns in the last 5 minutes of cooking. Season to taste and garnish with parsley.
