Thai prawn and pumpkin skewers

Impress with these flavorful prawn and pumpkin skewers!
Ingredients:
  • 800g kent pumpkin, peeled
  • 16 medium green prawns, peeled, deveined (tails intact)
  • 1 lime, quartered, thinly sliced into triangles
  • 31.50 gm lime juice
  • 24.00 gm brown sugar
  • 36.60 gm fish sauce
  • 1 long red chilli, finely chopped
  • 62.50 ml fresh Thai basil leaves
Instructions:
  • Slice the pumpkin into 5mm-thick, small wedges to form 16 pieces. Place the pumpkin in a large heatproof, microwave-safe bowl. Microwave covered on HIGH (100%) for 2 minutes until just tender. Drain the pumpkin pieces. Skewer 1 piece of pumpkin, 1 prawn, and 1 lime triangle onto each skewer.
  • In a medium bowl, mix together lime juice, sugar, fish sauce, and chili until the sugar dissolves.
  • Heat a greased barbecue plate or chargrill on high. Grill skewers for 2 to 3 minutes, turning occasionally, until prawns are cooked through. Transfer to a serving plate, drizzle with dressing, sprinkle with basil, and serve.
