Satisfy cravings with Thai prawn and rice patties.
Ingredients:
  • 800.00 gm cooked Basmati rice
  • 250g prawn
  • 3 green onions, thinly sliced
  • 44.00 gm sweet chilli sauce
  • 24.40 gm fish sauce
  • 16.00 gm brown sugar
  • 125.00 ml coriander leaves, roughly chopped
  • 1 egg, beaten
  • 500.00 ml fresh white breadcrumbs
  • 75.90 gm vegetable oil
  • 90.75 gm sweet chilli sauce, extra, to serve
  • Coriander sprigs, to serve
  • Lime wedges, to serve
Instructions:
  • Prepare a baking tray with a layer of baking paper. In a large bowl, mix together cooked rice, prawns, onions, sweet chilli sauce, fish sauce, sugar, coriander, egg, and breadcrumbs until thoroughly combined.
  • Shape the mixture into 2.5cm-thick patties, using 1/2 cup at a time. Place them on a prepared tray, then refrigerate for 30 minutes.
  • In a non-stick frying pan, heat oil over medium heat. Cook patties in batches for 5 minutes on each side until golden. Serve with sweet chilli sauce, coriander, and lime.
