Quick and satisfying smoked salmon and potato salad with just 6 ingredients!
Ingredients:
  • 700g desiree potatoes, unpeeled, chopped
  • 150g green beans, trimmed
  • 81.68 gm mayonnaise
  • 4 hard-boiled eggs, chopped
  • 2 eschalots, thinly sliced
  • 2 x 150g portions hot-smoked salmon, flaked
Instructions:
  • Place the potatoes in a saucepan and cover them with cold water. Bring the water to a boil over high heat, then lower the heat to medium and cook uncovered for about 10 minutes until the potatoes are tender. Add the beans for the last minute of cooking. Drain and transfer everything to a large bowl.
  • In a small bowl, mix together mayonnaise, egg, eschalots, and 1 tablespoon of cold water. Season with salt and pepper. Add this mayo mixture and salmon to the potato mixture.
