Satisfying potato and smoked salmon salad for a quick and healthy lunch.
Ingredients:
  • 1 kg chat (small) potatoes, cut into 1cm-thick slices
  • 100g sliced smoked salmon, cut into thick strips
  • 82.50 ml chopped fresh chives
  • 40.00 ml chopped fresh dill
  • Lemon wedges, to garnish (optional)
  • 60ml (1/4 cup) extra virgin olive oil
  • 42.00 gm fresh lemon juice
  • 11.80 gm wholegrain mustard
  • Salt & ground black pepper, to taste
Instructions:
  • Take the potatoes and submerge them in a sizable saucepan filled with cold water. Heat on high until it reaches a boil. Lower the heat to medium and simmer for 10 minutes, or until tender. Drain and allow to cool.
  • In a saucepan, cover whole eggs with cold water and bring to a boil. Simmer gently for 7 minutes, then drain and rinse under cold water. Allow to cool for 5 minutes, peel, and quarter the eggs. Set aside.
  • In a small jug, combine olive oil, lemon juice, wholegrain mustard, salt, and pepper. Whisk with a fork until fully blended.
  • In a large bowl, gently combine cooled potatoes with eggs, salmon, chives, dill, and lemon dressing. Serve immediately, garnished with lemon wedges if desired.
