Smoked salmon potato salad

Elevate potato salad with smoked salmon, capers, and dill for a gourmet twist.
Ingredients:
  • 700g small Desiree potatoes, cut into 2cm pieces (see note)
  • 185ml (3/4 cup) buttermilk
  • 65g (1/4 cup) low-fat mayonnaise
  • 2 tsp horseradish cream
  • 2 tsp finely grated lemon rind
  • 2 tsp chopped drained capers
  • 40.00 ml chopped fresh dill
  • 1 celery stick, trimmed, thinly sliced
  • 1 x 175g pkt Smoked Salmon portions, skin removed, flaked
  • 1/2 butter lettuce, leaves separated, washed, dried
Instructions:
  • Boil the potato in a large saucepan for 8 minutes until just tender. Drain, rinse in cold water, and transfer to a large bowl.
  • Combine the buttermilk, mayonnaise, horseradish cream, lemon zest, capers, and dill in a bowl. Taste and season with salt and pepper to elevate the flavors.
  • Combine the buttermilk mixture, onion, and celery with the potato, stirring until well combined. Gently mix in the salmon. Serve the salad mixture over lettuce leaves on individual plates.
