Satisfying one-pot soup with ground turkey, red potatoes, rice, assorted veggies. Easy and comforting.
Ingredients:
  • 0.5 cup frozen peas
  • 5 cups low-sodium chicken broth
  • 3 cups water
  • 1 cup chopped zucchini
  • 0.5 cup frozen corn
  • 3 carrots, sliced
  • 3 red potatoes, cubed
  • 2 stalks celery, diced
  • 0.5 cup frozen green beans
  • 1 pound ground turkey
  • 0.5 large yellow onion, diced
  • 1 tablespoon minced garlic
  • 1 tablespoon kosher salt
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • 0.5 teaspoon ground turmeric
  • 1 teaspoon tomato paste
  • 0.5 cup uncooked white rice
  • 0.5 bunch cilantro, chopped
Instructions:
  • In a large pot, add chicken broth, water, zucchini, corn, carrots, potatoes, celery, peas, and green beans. Bring to a boil, then simmer until veggies are slightly tender, about 10 minutes.
  • In a skillet over medium-high heat, warm oil. Brown turkey by breaking it up into small pieces for 5 to 7 minutes. Add onion and garlic. Season with 1/2 teaspoon salt, cumin, coriander, and turmeric. Transfer mixture to the pot with vegetables. Stir in remaining salt, tomato paste, and bay leaves. Simmer on low for 1 hour until vegetables are tender.
  • Fold in the rice into the fragrant soup and let it gently simmer until perfectly tender for about 15 minutes. Serve the soul-warming soup in bowls, garnish each with fresh cilantro, and enjoy!
