Traditional Chili with Ground Turkey

Hearty turkey chili with pinto and red beans for warmth and jalapenos for a spicy kick. Great for chilly nights.
Ingredients:
  • 3 tablespoons olive oil
  • 1 pound ground turkey
  • 1 large onion, diced
  • 1 green bell pepper, chopped
  • 1 small red bell pepper, chopped
  • 2 jalapeno peppers, diced
  • 4 cloves garlic, minced
  • 2 tablespoons cumin
  • 2 tablespoons chili powder
  • 1 tablespoon white sugar
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon ground thyme
  • 2 cups beef broth
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (15 ounce) can red beans, drained and rinsed
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
Instructions:
  • In a large skillet over medium-high heat, heat olive oil. Add ground turkey and cook until crumbly and browned. Drain excess grease. Add onion, green and red bell peppers, and jalapeno peppers. Cook until veggies are soft, about 8 minutes. Stir in garlic, cumin, chili powder, sugar, salt, black pepper, and thyme. Cook until fragrant, about 8 minutes.
  • Combine beef broth, pinto beans, red beans, diced tomatoes, tomato sauce, and tomato paste in the pot. Bring to a boil, then simmer on low heat for about 45 minutes until thickened, stirring occasionally. If you prefer a thinner chili, cover the pot while simmering.
