Quick and comforting white chicken chili made with beans, freezes perfectly. A cozy, mild twist on traditional chili for chilly evenings.
Ingredients:
  • 2 (15-ounce) cans white beans, drained OR 1/2 pound dry white beans
  • 1 tablespoon extra virgin olive oil
  • 1 medium onion, chopped, about 1 1/2 cups
  • 1 clove garlic, minced, about 1 teaspoon
  • 2 teaspoons ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1/8 teaspoon ground cloves
  • 2 4-ounce cans chopped green chilies
  • 1 1/2 teaspoondried oregano
  • 1 jalapeño or serrano pepper, finely chopped (optional)
  • 2 pounds boneless, skinless chicken thighs (can use breast meat, but thighs will work better), trimmed of excess fat and diced into 1/2- to 3/4-inch pieces
  • 3 cups chicken stock
  • 1 1/2 cups grated Monterey Jack cheese
  • If cooking dry beans:
  • 1 1/2 teaspoons salt
  • 1 clove garlic
  • 1 bay leaf
Instructions:
  • For dry beans, start by cooking them: In a medium pot, cover the beans with hot water (about 2 quarts above the beans). Season with 1 1/2 teaspoons of salt, 1 chopped garlic clove, and 1 bay leaf. Bring to a simmer over high heat, then cover and reduce to low heat. Cook for 2 to 3 hours until tender (note: cannellini cook faster than navy beans). Drain before using.
  • In a large pot, cook onions in olive oil until tender on medium-high heat for about 4 minutes. Stir in garlic, cumin, cloves, and cayenne for an additional minute. Mix in green chiles and dried oregano. Include minced jalapeño or serrano chile, if desired.
  • Add the chicken and stock to a high heat, let it simmer covered for 20 minutes until the chicken is cooked through.
  • Pour in the drained, cooked beans and simmer for an additional 15 minutes. Season to taste with salt, adding a teaspoon or more as needed based on the saltiness of your chicken stock and beans.
  • Serve with your choice of toppings like grated cheese, cilantro, fresh tomato, salsa, scallions, and guacamole. Enjoy with warm tortillas or chips. Don't forget to rate and review if you loved this recipe!
