30-minute white chicken chili with creamy cannellini beans, fresh zucchini, and zesty chilies.
Ingredients:
  • 1 pound boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 medium onion, chopped
  • 1 teaspoon ground cumin
  • 3.5 cups water
  • 1 (15.5 ounce) can no-salt-added cannellini beans, rinsed and drained
  • 1 (4 ounce) can mild chopped green chilies, undrained
  • 1 (5.4 ounce) package Knorr® Rice Sides™ - Herb & Butter
  • 1 medium zucchini, quartered lengthwise and sliced
Instructions:
  • Season the chicken with salt and pepper to your liking. In a large deep nonstick skillet, heat oil over medium-high heat. Cook the chicken and onion, stirring occasionally, until the chicken is lightly browned, approximately 4 minutes.
  • Add ground cumin and cook until fragrant for about 30 seconds, then include water, beans, and chilies with their liquid. Bring to a boil over medium-high heat.
  • Add Knorr® Rice Sides™ - Herb & Butter to the pan and stir well. Cover and simmer for 4 minutes. Mix in zucchini and continue cooking until the rice is tender, about 3 minutes. Optionally, garnish with lime wedges, chopped fresh cilantro, and fried tortilla strips or tortilla chips. Serve and enjoy!
