Spicy white bean chicken chili with tomatillos, green chilies, and corn.
Ingredients:
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can chicken broth
  • 1 (18.75 ounce) can tomatillos, drained and chopped
  • 1 (16 ounce) can diced tomatoes
  • 1 (7 ounce) can diced green chiles
  • 0.5 teaspoon ground coriander seed
  • 0.25 teaspoon ground cumin
  • 1 pound diced, cooked chicken meat
  • 1 (15 ounce) can white beans
  • 2 ears fresh corn, kernels cut from cob
  • 1 pinch salt and black pepper to taste
Instructions:
  • Prepare your ingredients.
  • In a large pot, sauté onions and garlic in hot oil until they are soft.
  • Add the broth to the pot, followed by the tomatillos, tomatoes, and chiles. Mix well and season with oregano, coriander, and cumin. Bring to a boil, then let it simmer for 10 minutes.
  • Simmer chicken, beans, and corn for 5 minutes, then season to taste with salt and pepper.
  • Savor while steaming!
