Quick and comforting chili made with rotisserie chicken and pantry staples, ready in just 25 minutes.
Ingredients:
  • 2 tablespoons butter or margarine
  • 1 large onion, coarsely chopped (1 cup)
  • 2 cloves garlic, finely chopped
  • 3 cups cubed deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
  • 1/2 teaspoon ground cumin
  • 2 cans (10 oz each) diced tomatoes with green chiles, undrained
  • 1 can (15.5 oz) great northern beans, drained, rinsed
  • Sour cream, if desired
  • Chopped fresh cilantro, if desired
Instructions:
  • In a large Dutch oven, melt butter over medium-high heat. Saute onion and garlic until onion is tender, stirring occasionally.
  • Add all remaining ingredients, excluding sour cream and cilantro. Bring to a boil, then simmer over low heat without covering for 2 to 3 minutes, stirring occasionally, until heated through.
  • Garnish each portion with a dollop of sour cream and a sprinkle of fresh cilantro.
