Delicious turkey carcass soup with hearty veggies, rice, and tender meat.
Ingredients:
  • 1 picked over turkey carcass
  • 1.5 cups leftover stuffing
  • 1 onion, peeled and diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 1 tablespoon poultry seasoning
  • 1 teaspoon ground sage
  • 2.5 quarts chicken broth
  • 1 cup water, or as needed
  • 0.5 teaspoon garlic salt, or to taste
  • ground black pepper, to taste
  • 2 cups (uncooked) regular long-grain white rice
  • 1 (16 ounce) package frozen green peas
Instructions:
  • In a large, deep pot, nestle the turkey carcass and add stuffing, onion, carrots, celery, poultry seasoning, sage, and bay leaves.
  • Pour the flavorful chicken broth into the pot and add more water if necessary to fully cover the ingredients. Bring the mixture to a lively boil over medium-high heat. Lower the heat to medium and gently simmer, periodically removing any foam that rises to the top, for approximately 1 hour.
  • Remove the bones and skin from the pot, keeping the meat.
  • Enhance the soup with garlic salt and pepper. Add rice and bring to a boil over medium-high heat. Then, lower the heat to medium and let it simmer for 15 minutes.
  • Add the peas and let them simmer until the rice is tender, approximately 10 more minutes.
  • Taste and season your dish to perfection before serving.
