"Create a savory casserole using leftover turkey, mashed potatoes, cheese, and a secret sauce for a tasty 'day after' meal."
Ingredients:
  • 3 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 (12 fluid ounce) can evaporated milk
  • 0.25 teaspoon freshly ground black pepper
  • 0.25 teaspoon onion powder
  • 1 cup finely crushed herb-seasoned dry bread stuffing mix
  • 1 cup cooked, diced turkey meat
  • 1 cup shredded Cheddar cheese
  • 2 cups leftover mashed potatoes
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), and give a gentle grease to a 9x13 inch baking dish.
  • In a saucepan over low heat, melt the butter, then whisk in the flour. Gradually pour in the evaporated milk and water, and season with salt, pepper, and onion powder. Cook the sauce over low heat for 5 minutes, stirring constantly.
  • Melt 2 tablespoons of butter in a saucepan over low heat. Mix in the dry stuffing. Place the turkey in the baking dish. Pour the sauce over the turkey and sprinkle with Cheddar cheese. Cover with mashed potatoes, and finish with a layer of the stuffing mixture on top.
  • Roast in the oven for 45 minutes until golden brown.
