Transform Thanksgiving leftovers into crave-worthy Turkey Pot Pies, filled with savory turkey, veggies, and flaky crust in individual ramekins for a fun and delicious meal.
Ingredients:
  • 1/2 cup diced sweet onion
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 2 cups chopped cooked turkey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 1 1/2 - 2 cups chicken or turkey stock
  • 1/2 cup frozen sweet peas
  • 1/2 teaspoon fresh thyme (optional)
  • 2 9-inch pie crusts, store-bought or homemade
  • 1 egg + 1 tablespoon water, whisked, for brushing
Instructions:
  • Preheat your oven to 350˚F for the perfect baking temperature.
  • Prepare the pot pie base by melting butter in a large skillet over medium heat. Sauté onions, carrots, and celery until the vegetables soften, which should take about 3-4 minutes. Add chopped turkey and season with salt and pepper.
  • Prepare the gravy by incorporating flour into the filling and stirring until it becomes smooth. Cook for a minute or two to eliminate the flour taste. Gradually whisk in the stock to create a delicate gravy. If the consistency is too thick, adjust by adding more stock or water in 1/4 cup increments.
  • Stir in peas and fresh thyme into the gravy once it's ready, then take it off the heat.
  • Spoon the pot pie filling into the ramekins, ensuring they are filled up 3/4 of the way to avoid spillover. Feel free to use any shape or size of ramekin, but round ones are recommended for the best results.
  • Place pie crust over ramekins: Place a layer of store-bought or homemade pie crust over the ramekins, ensuring the edges are sealed tightly. Poke a few holes in the center for steam to escape. Make an egg wash by whisking together egg and water, then brush it over the crust.
  • For a delicious result, bake the turkey pot pies at 350 ̊F for 20-25 minutes until the crust is beautifully golden all over. Allow them to cool briefly before enjoying. Store any leftovers in the fridge where they will keep well for up to five days. To reheat, bake in a 350°F oven until heated through and bubbling.
