Transform leftovers into a delectable turkey pot pie.
Ingredients:
  • 4 (9 inch) frozen pie crusts, thawed
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1 cup frozen diced carrots
  • 2 cups diced cooked turkey
  • 1 cup gravy
  • 1 cup diced leftover green beans
  • 1 tablespoon bacon bits
  • 1 teaspoon dried parsley
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • ground black pepper to taste
  • 1 teaspoon water
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C), then elegantly line 2 pie dishes with your favorite pie crusts.
  • Combine the corn, peas, and carrots in a microwave-safe glass or ceramic bowl. Cover with plastic wrap and microwave until tender, for 2 to 6 minutes.
  • Combine the corn mixture, turkey, gravy, green beans, bacon bits, parsley, sage, thyme, and black pepper in a large bowl. Divide the turkey mixture evenly between the two pie dishes. Cover each pie with a pastry crust, trim to fit, crimp and pinch the edges to seal. Make 4 slits in the top of each pie.
  • Combine egg and water in a small bowl and brush over the top of each pie. Wrap a strip of aluminum foil around the outer edges of each pie crust.
  • Bake in the preheated oven for about 45 minutes until golden brown and thoroughly heated. Allow to cool for 5 to 10 minutes before serving.
