Succulent turkey steaks paired with flavorful brown fried rice - a wholesome and mouthwatering weeknight dinner.
Ingredients:
  • 4 x 125g lean turkey breast steaks
  • 20.00 ml cumin seeds
  • 2 tsp garam masala
  • 2 brown onions, sliced
  • 6 cardamom pods, split
  • 340g brown rice
  • 1 large carrot, coarsely grated
  • 1 zucchini, coarsely grated
  • 150g pea
  • 250.00 ml fresh coriander leaves, plus extra to garnish
  • 100g mixed salad leaves
  • 1 Lebanese cucumber, sliced
  • 2 radishes, sliced
  • 100g yellow grape tomatoes, halved
  • 20.00 ml white balsamic vinegar
  • 1 lemon, cut into wedges
Instructions:
  • Cut each turkey breast in half horizontally. Mix equal parts of cumin and garam masala in a bowl. Sprinkle the mixture over the turkey and season generously with pepper.
  • 1. Heat a large non-stick frying pan over medium-high heat and lightly spray with oil. Sauté onion for 5–6 minutes until softened. Stir in cardamom, cumin, and garam masala for 1 minute until fragrant. Stir in rice, carrot, zucchini, and peas for 2 minutes until vegetables are softened. Mix in fresh coriander and cover to keep warm.
  • Preheat a spacious non-stick frying pan over medium heat. Gently coat the turkey with oil and sear for 2 minutes on each side until golden and fully cooked.
  • In a bowl, mix salad leaves with cucumber, radish, and tomatoes. Drizzle with vinegar and toss well. Serve with turkey, rice mixture, lemon wedges, and extra coriander.
