Spice-rubbed whole chicken for a mouthwatering roast with allspice, cloves, cinnamon, and nutmeg.
Ingredients:
  • 2 teaspoons salt
  • 1 teaspoon white sugar
  • 0.125 teaspoon ground cloves
  • 0.125 teaspoon ground allspice
  • 0.125 teaspoon ground nutmeg
  • 0.125 teaspoon ground cinnamon
  • 1 (4 pound) whole chicken
  • 5 cloves garlic, crushed
Instructions:
  • In a small bowl, combine salt, sugar, cloves, allspice, nutmeg, and cinnamon. Rub the chicken all over with the spice mixture. Transfer the seasoned chicken to a large bowl, cover, and refrigerate for 24 hours.
  • Preheat your oven to a fiery 500 degrees F (260 degrees C).
  • Lay the chicken on a rack in a roasting pan, breast-side down. Fill the chicken cavity with crushed garlic.
  • Roast the chicken in the preheated oven for 15 minutes. Then, lower the heat to 450°F (230°C) and roast for 15 minutes more. Baste the chicken with pan drippings, reduce the heat to 425°F (220°C), and continue roasting for 30 minutes until a thermometer reads 165°F (74°C) when inserted near the bone in the thickest part of the thigh.
  • Take out of the oven and let it rest in a cozy spot for 20 minutes before cutting.
