Flavorful turkey fried rice - a healthy twist on a classic dish.
Ingredients:
  • 18.40 gm vegetable oil
  • 500g turkey mince
  • 2 tsp grated ginger
  • 3 green onions, thinly sliced
  • 500.00 ml frozen peas, corn and capsicum
  • 31.50 gm soy sauce
  • 800.00 gm cooked Naturally Low GI White Rice
  • 2 tsp sesame oil
Instructions:
  • In a large wok over high heat, sizzle 1/2 teaspoon of vegetable oil. Let half of the beaten egg flow in, swirling the wok to create a thin omelette. Cook for 1 minute, then transfer to a clean board. Repeat with another 1/2 teaspoon of oil and the rest of the egg to form a second omelette. Roll them up and slice into thick pieces.
  • In the same wok, heat the rest of the vegetable oil. Stir-fry the turkey mince for 2 minutes, using a spatula to break up any lumps. Add garlic, ginger, and 2 onions, and stir-fry for 3 minutes until the mince is cooked. Toss in the vegetables and soy sauce, stir-fry for 2 minutes until hot. Finally, add the rice and sesame oil, and stir-fry for 2 more minutes until everything is heated through.
  • Top the dish with a fluffy omelette and sprinkle with the leftover onion.
