Delicious and light slow cooker chili made with ground turkey, pumpkin, and seasoned black beans.
Ingredients:
  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 onion, chopped
  • 1 (28 ounce) can diced tomatoes
  • 2 cups cubed fresh pumpkin
  • 1 (15 ounce) can chili beans
  • 1 (15 ounce) can seasoned black beans
  • 3 tablespoons brown sugar
  • 1 tablespoon pumpkin pie spice
  • 1 tablespoon chili powder
Instructions:
  • In a large soup pot over medium heat, sizzle the olive oil and cook the turkey until golden and no longer pink, stirring frequently for about 10 minutes. Remove and discard any excess fat.
  • Place the turkey in a slow cooker and combine with onions, diced tomatoes, pumpkin, chili beans, black beans, brown sugar, pumpkin pie spice, and chili powder. Cook on Low until the pumpkin is tender and starts to break apart, for about 3 hours.
