Fall-inspired overnight pumpkin oatmeal cooked in a slow cooker for a hassle-free breakfast.
Ingredients:
  • cooking spray
  • 2 cups steel-cut oats
  • 0.5 cup firmly packed light brown sugar
  • 1.5 tablespoons ground cinnamon
  • 0.75 teaspoon ground nutmeg
  • 1 cup canned pumpkin
  • 6 cups water
  • 1 cup fat-free half-and-half
  • 1 cup raisins
  • 2 tablespoons firmly packed light brown sugar
  • 2 teaspoons firmly packed light brown sugar
  • 5 tablespoons chopped walnuts
  • 1 teaspoon chopped walnuts
Instructions:
  • Lightly coat a small slow cooker with cooking spray.
  • Combine oats, 1/2 cup brown sugar, cinnamon, and nutmeg in a large bowl. Add pumpkin, followed by water and half-and-half. Mix in raisins and vanilla extract.
  • Pour the oat mixture into the slow cooker and let it cook on Low until the oats are soft and creamy, for about 7 1/2 to 8 1/2 hours.
  • Add a generous sprinkle of 2 tablespoons plus 2 teaspoons of rich brown sugar and 5 tablespoons plus 1 teaspoon of crunchy walnuts over the creamy oatmeal.
