Slow cooker steel-cut oats with apples, almond milk, pumpkin puree, cranberries, and pecans – a hearty and flavorful breakfast.
Ingredients:
  • cooking spray
  • 32 ounces vanilla-flavored almond milk
  • 1 (15 ounce) can pumpkin puree
  • 2 tablespoons pure maple syrup
  • 1 tablespoon ground cinnamon
  • 2 cups steel-cut oats
  • 1 cup dried cranberries
  • 2 tablespoons unsalted butter
  • 1.5 cups diced apple, or more to taste
  • 1 cup chopped pecans
Instructions:
  • Gently coat the slow cooker with cooking spray.
  • In the slow cooker, mix together almond milk, water, pumpkin puree, maple syrup, cinnamon, and salt until well combined. Stir in oats, dried cranberries, and butter.
  • Cook the mixture on Low in your slow cooker for 3 1/2 hours. Add diced apples and pecans, then keep cooking on Low for an additional 2 hours.
