Quick and flavorful ground turkey soup with white rice that freezes and reheats perfectly.
Ingredients:
  • 0.5 pound ground turkey
  • 0.33333334326744 cup chopped onion
  • 0.33333334326744 cup chopped celery
  • 1 clove garlic, finely chopped
  • 1 (14.5 ounce) can chicken broth
  • 1 (14.5 ounce) can fire-roasted diced tomatoes with juice
  • 3 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried oregano
  • 1 large bay leaf
  • 1 cup frozen mixed vegetables
  • 0.5 cup cooked white rice
Instructions:
  • In a large saucepan over medium heat, cook ground turkey with onion, celery, and garlic until turkey is cooked through and browned, for about 5 to 7 minutes. Remove excess fat from the saucepan before proceeding.
  • Combine chicken broth, fire-roasted tomatoes, tomato paste, Worcestershire sauce, thyme, oregano, bay leaf, salt, and pepper in the pot. Simmer covered over medium-low heat for 10 minutes.
  • Combine the frozen vegetables and rice in the pot. Allow them to simmer until the vegetables are tender, approximately 10 minutes. Discard the bay leaf and serve the dish.
