Warm up with a hearty Southwestern slow cooker soup featuring ground turkey, poblanos, and corn.
Ingredients:
  • 5 medium fresh poblano peppers
  • 4 slices bacon
  • 2 pounds ground turkey
  • 3 teaspoons ground cumin, divided
  • 1.5 teaspoons ground coriander, divided
  • 2 cups chopped onions
  • 6 cloves garlic, minced
  • 4 cups chicken broth
  • 2 (11 ounce) cans Southwest-style corn, undrained
  • 3 cups peeled and chopped russet potatoes
  • 2 teaspoons chili powder, or to taste
  • 1 teaspoon chipotle chili powder, or to taste
  • 2 cups heavy cream
  • 1 medium lime, cut into wedges
Instructions:
  • Position an oven rack 6 inches below the broiler and preheat the broiler.
  • Broil poblano peppers on the oven rack until skins blister and blacken, about 4 to 6 minutes. Turn peppers, repeat on other side. Then, transfer peppers to a sealed paper bag to cool.
  • Fry bacon in a large nonstick skillet over medium heat until golden and crispy, around 10 minutes. Take it out of the skillet, let it cool for a bit, then crumble it. Keep it aside for later.
  • In the same skillet, brown the turkey over medium-high heat, breaking it up as it cooks. Season with 1 teaspoon cumin, 1/2 teaspoon coriander, salt, and pepper. Reduce heat to medium and cook for about 5 minutes. Add onions and cook until translucent, about 5 minutes. Stir in garlic and cook until fragrant, for 1 to 2 minutes.
  • Peel and chop the poblano peppers.
  • Transfer the skillet contents into a 5- or 6-quart slow cooker. Mix in peppers, the rest of the cumin and coriander, chicken broth, corn, potatoes, chili powder, and chipotle chili powder. Season with salt and pepper to your liking.
  • Cover slow cooker and cook on Low for 8 hours or on High for 4 hours until potatoes are tender. Add cream and cook on High for 10 minutes until heated through. Serve with crumbled bacon and a lime wedge in each bowl.
