Coconut-lime rice with intense coconut flavor and zesty lime punch.
Ingredients:
  • 1 cup basmati rice
  • 1 tablespoon coconut oil
  • 1 teaspoon butter
  • 0.25 cup flaked coconut
  • 1 lime, zested and juiced
  • 1 cup coconut milk
  • 1 cup chicken broth
  • salt, to taste
  • ground black pepper, to taste
Instructions:
  • Rinse the rice thoroughly until the water runs clear, then drain it.
  • In a large skillet over medium-high heat, melt coconut oil and butter. Sauté rice and coconut flakes for 3 to 4 minutes. Add lime juice, coconut milk, chicken broth, lime zest, and salt. Bring to a gentle boil.
  • Reduce heat to low, cover, and simmer for 20 minutes. Let sit covered for 5 minutes, then fluff with a fork and season with pepper before serving.
