Make fragrant Thai coconut lime chicken with rice.
Ingredients:
  • 250g packet long-grain white rice in 90 seconds
  • 166.65 gm light coconut cream
  • 24.40 gm fish sauce
  • 2 tsp finely grated lime rind
  • 21.00 gm lime juice
  • 4 (150g each) chicken breast fillets, trimmed
  • 2 green onions, thinly sliced
  • 115g fresh baby corn, halved diagonally
  • 125.00 ml fresh coriander leaves
  • Lime wedges, to serve
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced. Lay out a sheet of baking paper on a flat surface. Pile one-quarter of the rice in the middle of the paper. Mix coconut cream, fish sauce, lime rind, and lime juice in a bowl. Drizzle 2 tablespoons of the coconut cream mixture over the rice. Place a chicken breast on top. Toss onion, carrot, and corn in a bowl. Spread one-quarter of the onion mixture over the chicken. Drizzle 1 tablespoon of the remaining coconut mixture over the onion mix.
  • Fold each side of the paper towards the center to seal in the filling. Roll up the ends to enclose it and tuck under to secure. Place the parcel on a baking tray and repeat with the remaining ingredients.
  • Bake for 20-22 minutes, until chicken is perfectly cooked. Unwrap parcels, garnish with fresh coriander, and serve with lime wedges.
