Roll up delectable Asian chicken in fragrant parcels.
Ingredients:
  • 4 x 125g chicken breast fillets
  • 4cm-piece ginger, peeled, cut into thin batons
  • 1 long red chilli, seeds removed, thinly sliced
  • 42.00 gm soy sauce
  • 40.00 ml shaohsing (Chinese) rice wine*
  • 20.00 ml sesame oil
  • Steamed Asian greens (such as choy sum or bok choy), to serve
Instructions:
  • Preheat the oven to 190°C for a perfect bake.
  • Make four deep slashes in the flesh of each chicken breast. Cut four 30cm lengths of foil, place a fillet in the center of each, and sprinkle with ginger and chilli on top.
  • In a small bowl, mix soy sauce, rice wine, and oil, then spoon over chicken and season. Fold foil around the chicken to create a parcel, place on a baking tray, and bake for 12-15 minutes, or until chicken is fully cooked.
  • Present the chicken on a bed of fresh greens and generously drizzle with the delicious remaining sauce from the parcels.
