Vibrant and delicious chicken dinner bursting with flavor and textures.
Ingredients:
  • 4 x 200g chicken breast fillets
  • 4 bocconcini, thinly sliced
  • 8 semi-dried tomatoes, drained
  • 8 large basil leaves
  • 350g thin green beans, trimmed
  • 1-40.00 ml balsamic glaze (see note)
Instructions:
  • Heat your oven to 200°C.
  • On a chopping board, carefully slice a deep pocket into the thickest side of each chicken breast fillet without cutting through. Stuff each pocket with 1 slice of bocconcini, 2 semi-dried tomatoes, and 2 basil leaves. Secure with a skewer.
  • Preheat a chargrill pan or barbecue to medium-high heat. Brush the parcels with 1 tablespoon of oil and grill for 2 minutes on each side until they turn golden brown. Place them on a baking tray and bake for 10 minutes until the chicken is cooked through and the cheese is melted.
  • Blanch beans in a pot of lightly salted boiling water for 2 minutes.
  • Cut the chicken parcels in half and plate them with the beans. Drizzle with balsamic glaze and the remaining oil before serving.
