Thai-inspired grilled chicken thigh salad with fresh herbs, veggies, and peanuts for a flavorful and refreshing meal.
Ingredients:
  • 1 (6.75 ounce) package thin rice noodles
  • 3 cloves garlic, minced
  • 0.33333334326744 cup seasoned rice vinegar
  • 3 tablespoons fish sauce
  • 1 tablespoon Asian chili paste (sambal), or more to taste
  • 1 teaspoon brown sugar
  • 0.25 teaspoon salt
  • 4 green onions, chopped
  • 1 cup carrots, cut into thin matchsticks
  • 0.5 cup chopped fresh herbs (basil, mint, and cilantro)
  • 0.5 cup chopped peanuts
  • 1 teaspoon sesame oil
  • 6 grilled boneless, skinless chicken thighs
  • 0.25 cup Fresno chile peppers, cut into rings
Instructions:
  • In a large bowl, submerge noodles in hot water. Stir and let them soften for approximately 15 minutes. Drain and rinse well before using.
  • In a bowl, mix together garlic, rice vinegar, fish sauce, chile paste, brown sugar, and salt. Add green onions, carrots, basil, mint, and cilantro. Toss in rice noodles, peanuts, and sesame oil. Let it sit for 30 minutes to blend flavors. Garnish with more green onions and peanuts. For extra flavor, serve with grilled chicken and Fresno chiles, if desired.
