Enhance pork noodle salad with Chinese five spice for a sweet, authentic touch.
Ingredients:
  • 100g (1/4 cup) char siu sauce
  • 1/2 tsp Chinese five spice
  • 42.90 gm honey
  • 40.00 ml rice wine vinegar
  • 21.00 gm soy sauce
  • 600g pork fillet, trimmed
  • 150g dried soba noodles
  • 180g (3 cups) wombok, finely shredded
  • 1 continental cucumber, deseeded, cut into matchsticks
  • 3 green shallots, thinly sliced
  • 52.50 gm lemon juice
  • 1 tsp sesame oil
  • 1 fresh long red chilli, thinly sliced
  • Fresh baby coriander, to serve (optional)
Instructions:
  • In a large glass or ceramic bowl, mix together char siu sauce, five spice, garlic, 1 tablespoon of honey, 2 teaspoons of rice wine vinegar, and 1 teaspoon of soy sauce. Add the pork and cover with plastic wrap. Refrigerate for 4 hours or overnight to marinate.
  • 1. Preheat your oven to 220C/200C fan forced and line a baking tray with baking paper. Top with a wire rack and give it a quick spray with oil. 2. Drain the pork from the marinade, saving the marinade for later. Place the pork on the rack and roast for 16-18 minutes, turning once, until cooked through. 3. Let the pork rest for 6 minutes. Slice and then set aside. 4. In a small saucepan over medium heat, bring the reserved marinade to a boil. Simmer for 3-4 minutes until thickened. Serve the flavorful sauce with the sliced pork.
  • While noodles are cooking as per the package instructions, drain and rinse them under cold running water. In a bowl, mix the noodles with wombok, cucumber, and shallot. In a separate bowl, whisk together lemon juice, sesame oil, remaining vinegar, honey, and soy sauce. Pour the dressing over the noodle mixture and toss everything together. Serve in individual bowls.
  • Arrange the pork on top of the noodle mixture and generously drizzle with the flavorful pan juices. Finish by sprinkling with chili and fresh baby coriander, if desired.
