Whip up a quick and aromatic char siu pork stir-fry for a cozy winter meal.
Ingredients:
  • 4 x 250g pork neck steaks
  • 120g (1/3 cup) char siu sauce (see note)
  • 36.40 gm peanut oil, plus extra, to grease
  • 2 cloves garlic, thinly sliced
  • 3cm piece ginger, cut into julienne (matchsticks)
  • 3 long red chillies, halved lengthwise, seeded, cut into 1cm pieces
  • 150g brussels sprouts, thickly sliced lengthwise
  • 150g green beans, trimmed, sliced on the diagonal
  • 12.20 gm fish sauce
  • 32.00 gm brown sugar
  • 40.00 ml white wine vinegar
  • 62.50 ml coriander leaves
Instructions:
  • Mix pork with flavorful char siu sauce in a spacious bowl.
  • Grease a chargrill pan with a touch of extra oil and heat over medium-high. Cook pork for 4 minutes on each side until done. Let the pork rest in the pan for 7 minutes before serving.
  • Heat oil in a wok or large pan over high heat. Stir-fry garlic and ginger until garlic is golden. Add chillies, brussels sprouts, beans, soy sauce, fish sauce, and sugar. Stir-fry until sugar dissolves. Add vinegar and half the coriander. Stir-fry until sauce is syrupy.
  • Slice the pork and evenly distribute it among individual bowls along with the stir-fry. Sprinkle the remaining coriander on top and serve with rice.
