Crispy pork with noodles

Enhance pork dish with authentic peanut satay flavor.
Ingredients:
  • 10.60 gm light soy sauce
  • 2 tsp Chinese rice wine (shao hsing)
  • 10.00 gm water
  • 5.00 gm cornflour
  • 400g pork mince
  • 60ml (1/4 cup) peanut oil
  • 500g pkt fresh wheat noodles
  • 2 tsp fresh ginger, finely chopped
  • 1 fresh long red chilli, sliced
  • 41.60 gm smooth peanut butter
  • 21.00 gm light soy sauce, extra
  • 500ml (2 cups) chicken style liquid stock
  • Sliced fresh red chilli, to serve
  • Sliced green shallots, to serve
  • Coriander leaves, to serve
Instructions:
  • In a bowl, mix together soy sauce, rice wine, water, and cornflour. Add pork mince and use your hands to combine thoroughly. Let it marinate for 15 minutes.
  • Heat oil in a smoking hot wok. Add half of the pork mixture and stir-fry until crisp, about 4 minutes. Transfer to a plate lined with paper towel using a slotted spoon. Repeat with the remaining mince, ensuring the wok is reheated between batches. Cover to keep warm.
  • While the noodles are cooking according to the packet directions, divide them among serving bowls. Leave 1 tablespoon of oil in the wok, then add garlic, ginger, and chili. Stir-fry for 1 minute until fragrant. Mix in peanut butter and soy sauce, then gradually pour in the stock. Let it simmer for 5 minutes until slightly reduced. Season with sugar, then pour this mixture over the noodles in the serving bowls. Top with pork, and garnish with chili, shallots, and coriander.
