Crispy pork & broccoli noodles

Easy homemade noodles made with just flour and water, paired with homemade chili oil and delicious pork for a special dish without the cost of takeout. Use dried noodles if short on time/space.
Ingredients:
  • olive oil
  • 1 bulb of garlic
  • 4 cm piece of ginger
  • 1 teaspoon dried chilli flakes
  • 2 tablespoons light soy sauce
  • red wine vinegar
  • 250 g minced pork
  • 500 g plain flour plus extra for dusting
  • 1 head of broccoli (375g)
  • 1 small red onion
  • 1 tablespoon runny honey
  • 30 g salted roasted peanuts
Instructions:
  • Peel and finely chop the garlic and ginger. Place half in a heat-proof dish with the dried chilli and set aside the rest. Heat 4 tablespoons of olive oil in a large non-stick frying pan until shimmering, then pour it into the heatproof bowl to create a fragrant oil. Add soy sauce and 1 tablespoon of red wine vinegar, let it sit for enhanced flavor. Cook the pork in the same pan until golden and crispy, breaking it up as it cooks. Combine flour and 300ml water to make a dough, knead until soft and elastic. Roll out the dough and cut into noodles. Boil salted water and cook broccoli until tender. Cook remaining garlic, ginger, and onions with the pork, then add honey for sweetness. Toss cooked noodles and broccoli with flavored oil, top with pork and crispy bits, peanuts, and quick-pickled onions. Enjoy right away.
