Crispy pork schnitzel with creamy dill sauce - a speedy, delicious dinner in 30 minutes!
Ingredients:
  • 4 boneless pork chops (1 pound total), 1/2 inch thick
  • 1/4 cup flour
  • 1 teaspoon seasoned salt (Spike or Lawrey's, or just substitute plain salt)
  • 1/4 teaspoon freshly ground black pepper
  • 1 egg, beaten
  • 2 tablespoons milk
  • 3/4 cup fine dry breadcrumbs or panko
  • 1 teaspoon paprika
  • 3 tablespoons extra virgin olive oil or canola oil
  • 3/4 cup chicken stock
  • 1/2 teaspoon dried dill or 2 teaspoons chopped fresh dill
  • 1/2 teaspoon salt
  • 1/2 cup sour cream (full fat)
Instructions:
  • Tenderize the pork cutlets by pounding them to a 1/4-1/8 inch thickness and make small slits around the edges to prevent curling.
  • Prepare your breading station: Combine flour, seasoned salt, and pepper in one shallow bowl. Whisk together egg and milk in another shallow bowl. Mix breadcrumbs (or panko) and paprika in a third shallow bowl.
  • Coat cutlets: In a large skillet over medium-high heat, swirl olive oil. Coat cutlets in seasoned flour, dip in egg mixture, then coat in bread crumbs and paprika mixture, ensuring all sides are covered.
  • Sear the cutlets in batches for 3 to 4 minutes per side, then cover with foil or keep warm in the oven.
  • Deglaze pan for dill sauce: Pour chicken stock into the skillet and scrape to release brown bits. In a bowl, combine dill and salt with sour cream. Mix sour cream mixture into stock. Heat and stir until thickened (avoid boiling). Serve with cutlets and lemon slices.
