Try a crispy pork schnitzel with a side of tangy apple and kale salad for a delicious family meal.
Ingredients:
  • 110g breadcrumbs
  • 800g baby potatoes, coarsely chopped
  • 50g plain flour
  • 1 free range egg, lightly whisked
  • 4 x 170g pork sirloin steaks, halved horizontally into 2 thin steaks
  • Rice bran oil, to shallow-fry
  • 1/2 x 175g pkt Brand chopped kale
  • 2 Granny Smith apples, cored, cut into wedges
  • 1 red onion, thinly sliced
  • 40.00 ml white wine vinegar
  • 36.40 gm extra virgin olive oil
  • Lemon wedges, to serve
Instructions:
  • Boil the potato in a saucepan of salted water for 6 minutes or until tender. Drain and rinse under cold water. Drain again.
  • First, season the flour in a shallow bowl. Next, setup two separate bowls, one with the beaten egg and another with breadcrumbs. Proceed to coat the pork first in the seasoned flour, then in the egg, and finally in the breadcrumbs. Heat the rice bran oil in a medium frying pan over medium heat. Cook the pork for 3 minutes on each side until it turns golden brown and is cooked through. Place the cooked pork onto a plate lined with paper towel to absorb any excess oil.
  • Combine the potato, kale, apple, onion, vinegar, and olive oil in a large bowl, tossing until mixed. Season to taste. Serve the pork with the salad and lemon wedges.
