Elevate your weeknights with this vibrant parmesan pork served with crispy sweet potato mash for a delightful crunch.
Ingredients:
  • 50g breadcrumbs
  • 25g parmesan
  • 2 tsp chopped thyme
  • 4 pork loin chops
  • 36.40 gm olive oil
  • 800g gold sweet potato, peeled, cut into 2cm pieces
  • 1 bunch baby broccoli, halved lengthways
  • 2 tsp balsamic vinegar
Instructions:
  • Preheat your oven to 180°C. Mix breadcrumbs, parmesan, and thyme on a plate. Coat the pork with the breadcrumb mixture. Heat oil in a large frying pan, then cook the pork for 2 minutes on each side until golden. Transfer the pork to a lightly greased baking tray and bake for 10 minutes until cooked through.
  • Steam the sweet potato over simmering water for 10 minutes until tender, then transfer to a bowl. Steam the baby broccoli for 3 minutes until tender.
  • Mash the sweet potato until smooth using a potato masher or fork. Season and stir in the vinegar.
  • Plate the pork, sweet potato mash, and baby broccoli evenly on serving dishes. Season to taste before serving.
