Italian Pork Tenderloin with Roasted Sweet Potatoes

Create a flavorful Mediterranean Parmesan garlic seasoning blend for a delicious meat and potatoes dish.
Ingredients:
  • 1 tablespoon olive or vegetable oil
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon seasoned salt
  • 1 clove garlic, finely chopped (about 1/2 teaspoon)
  • 2 medium dark-orange sweet potatoes (about 1 lb), peeled, cut into 1-inch chunks
  • 1 medium yellow onion, cut into 8 wedges each
  • 1 pork tenderloins (about 1 lb)
  • 1/2 tablespoon olive or vegetable oil
  • 1 tablespoon grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley, if desired
Instructions:
  • Preheat oven to 425°F. In a large bowl, combine 1 tablespoon of oil, 1 teaspoon of Italian seasoning, 1/4 teaspoon of salt, and garlic. Add sweet potatoes and onions, toss well to coat. Transfer mixture to a 9x13-inch pan and roast uncovered for 10 minutes.
  • Brush the pork tenderloins with a touch of oil. In a small bowl, combine Italian seasoning, seasoned salt, and Parmesan cheese.
  • Arrange vegetables in the center of the pan and position 1 pork tenderloin on each side. Spread the seasoning mixture evenly over the pork. Insert an ovenproof meat thermometer into the thickest part of the pork.
  • Continue roasting without a cover for an extra 20-25 minutes until the thermometer shows 155°F. Then, cover the pan with foil and allow it to rest for 5 minutes until the thermometer reaches 160°F. This resting period will increase the temperature by about 5°F, making it easier to carve the pork.
  • Slice the pork into thick 1-inch pieces and place them on a serving platter along with sweet potatoes and onions. Generously garnish with fresh parsley.
