Indulge in a savory pork tenderloin dish with sage, sun-dried tomatoes, and cream, elevated by prosciutto. Substitute chopped ham for a delightful twist.
Ingredients:
  • 2 tablespoons olive oil
  • 0.25 cup chopped prosciutto
  • 2 tablespoons chopped fresh sage
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped oil-packed sun-dried tomatoes
  • 0.25 cup chopped onion
  • 1.5 pounds pork tenderloin, cut into 1/2 inch strips
  • 0.5 cup chicken broth
  • 0.5 cup heavy cream
  • 0.25 teaspoon salt
  • 0.5 teaspoon ground black pepper
Instructions:
  • In a skillet over medium-high heat, warm the oil until shimmering. Saute the prosciutto, sage, parsley, sun-dried tomatoes, and onion until the onion turns tender, about 5 minutes. Add the pork strips to the skillet and cook until browned, approximately 10 minutes, turning them halfway through.
  • Combine the broth and heavy cream in the skillet, season with salt and pepper, and bring to a boil. Simmer over low heat for 20 minutes, stirring occasionally, until pork reaches 145°F (63°C) and the sauce thickens.
