Italian Roasted Pork Tenderloin

Preheat oven, season pork, and bake!
Ingredients:
  • 1 teaspoon olive or vegetable oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon fennel seed, crushed
  • 1/4 teaspoon pepper
  • 1 clove garlic, finely chopped
  • 2 pork tenderloins (about 3/4 lb each)
Instructions:
  • Preheat the oven to 375°F. Grease the rack of a roasting pan with cooking spray. In a small bowl, combine all ingredients except pork and mash into a paste using a spoon. Rub the paste generously over the pork.
  • Prepare the pork by placing it on a rack in a shallow roasting pan. Insert a meat thermometer into the thickest part of the pork, ensuring the tip is in the center. Bake the pork uncovered for approximately 35 minutes, or until it has a slight blush of pink in the center and the meat thermometer reads 160°F.
